I hope you are having a great week and a great start to the weekend! It has been raining where I live. It has rained all week and Friday the sun came out! What a beautiful sight! My flowers and my garden needed the rain. I have gone out to check on them and they are growing and looking great! I even have more cherry tomatoes and there are blooms on my regular tomato plants! I also saw two tiny baby peppers on my pepper plants! Gardening is so rewarding and exciting. I’m so happy that I decided to try it this year. I’m really enjoying this! My flowers look beautiful too and I need to go outside and cut the dead flowers off to encourage more blooming. I was supposed to plant seeds but I have been working on my website, podcast and so many other things that Iforgot and I haven’t really had time to get to the seeds. Hopefully I can get to that over the weekend.
I didn’t cook anything unusual this week but I did cook boneless skinless chicken thighs in my Ninja Foodie. I tell you, I love my Ninja Foodie and I use it all the time. I haven’t cooked a bad meal yet in my Ninja Foodie. Meat comes out so tender! We bought it for Christmas and it has been a very good investment. It’s worth every dollar. We even opened it Christmas Day and I made Prime Rib with it for our Christmas dinner. Best Prime Rib we have ever had! This is not a sponsored episode , I just love my Ninja Foodie and wanted to mention it to you. To cook the chicken, I start out with my chicken thighs in a bowl and pour a little olive oil on them, I then put my seasonings in the bowl and mix with my hands to coat the chicken. I seasoned the chicken with seasoning salt, pepper, paprika, garlic herb seasoning and a little curry powder. Use whatever you like. Next I put the chicken in my Ninja Foodie pot, place some sliced onions on top and pressure cook them for 12 mins. Oh my oh my!!! They are so tender when you pressure cook them!! I have cooked thighs with the bone in and skin on also and they both turn out great but having the bone removed saved me some time. After they are done, I switch the setting to air crisp and just crisp the outside a little. I want you all to know that this meat was falling apart!!! I could cut the meat with a fork!!! To go along with the chicken, I cooked rice, yellow squash and onions on the stove. I also cooked some green beans and lima beans together in the same pot. So we had good servings of vegetables. My daughter wanted her chicken barbecued so what I did was put sauce on her chicken when I got to the air crip stage. I made two separate batches of chicken and it was delicious both ways.
I just started eating chicken thighs. I usually buy chicken breasts and wings but when the stay at home situation started, sometimes it was hard to find breasts and wings. I didn’t want to drive all over town so I bought what I could. Now I love thighs!! They are economical also. That was such a simple quick dinner but it was so good!! We had strawberry shortcake with whipped cream for dessert. I love strawberries and it’s strawberry season.

I mentioned to you all last week that I have to return to work soon so I’m trying to get alot done with the podcast and everything else that goes along with it. You all know I have to keep this up so we can keep talking and sharing. I have a lot of work to do on my website, products and all of the work that goes into having a business. I’m just starting out so I’m also learning as I go. There aren’t enough hours in the day! I’m learning new things and I’m getting a little stressed because I’m running out of time. I go to work Tuesday and that’s just around the corner. I started getting a little salty because I was feeling sad about having to return to work and not being able to do it all within the short time that I have left. I’m taking some courses and my brain can only hold so much information at a time! LOL!! Oh my goodness! There is so much to learn! I have been working from morning to night. So the saltiness started to set in and I realized that my attitude wasn’t so good. Your attitude determines your altitude. I love quotes.The late Zig Ziglar said, “It’s your attitude, not your aptitude that will determine your altitude. Have you ever had those moments when your attitude isn’t the best and you know it. Deep down inside you know it but you feel the way you feel? Well I’m here to tell you that’s ok. We all have our moments but here’s the thing. We can wallow and sit in it for a little while but then it’s time to check ourselves. You know what I mean? Because wallowing in our bad attitudes and thinking about what we can’t do won’t help the situation. We can allow ourselves to feel those feelings and then we need to stand up straight, straighten our clothes, hold our chins and heads up, roll up our sleeves and make a plan. So that’s what I did.
I had started on a plan but I got so busy working on everything that I put the plan to the side. So I started working on my plan again. This is my plan so that I can succeed at this. Now, having a plan doesn’t mean that I won’t fail at some things. It doesn’t mean that you won’t fail at some things or make mistakes but that’s how we learn. We learn from our mistakes and keep on going. Having a plan helps you to stay on track. I thought: Rome wasn’t built in a day Angie! I talk out loud to myself… I take after my mother! LOL!! When I was a little girl, all my older sisters were at school and I was fortunate enough to be home alone with my mom because I’m the baby of the family. I would be playing in the living room and I’d hear my mom talking in the kitchen as she cooked. I would ask her who she was talking to and she would reply, I’m talking to myself baby. LOL!! It wasn’t until later in life that I learned that people think certain things about people that talk to themselves! LOL. No but I do it too. It helps me to work things out. I talk to myself while I drive or while I get dressed… I work things out and it works for me. I don’t do it all the time but occasionally I find myself talking. It’s really just thinking out loud.
Ok so back on track, I worked on my plan. I will have to tweak it as I go and that’s alright. I have a plan. To help me stay organized, I use Trello. Have you heard of it? It’s an app you can use on your phone or you can log on from your computer. Trello has different boards and you can use them to organize tasks, to do lists, etc… It has different boards so for example, I have a board for work, a board for Angela Monica, a board for my family and a board for vacations to name a few. You can even assign tasks and set up teams so people use it for work also. It’s great. I am again not a sponsor, I just like it. My daughter Maya told me about it. She is very calm and organized and I aspire to be like her when I grow up!! LOl! I am not the most organized person but I try and that’s what’s important. I do love To Do Lists and I think that’s why I love Trello. Also, I forgot to tell you that it’s free! There is a paid version also and I think you can upload your own background pictures with the paid version. I just use the free version. Now, I’ve got some processes and procedures in place so that I can get things done even though I have to return to work.
I have some advice saved in the notes section of my phone that I found very useful. Write yourself a letter about everything you made it through, and read it every time you think you just can’t make it through. -Unknown
This is such great advice. There may be times when something is difficult and you feel like giving up or you’re going through a hard time and you think you just can’t make it through. Think about this advice. It really does work. Pull out your letter and read it. Sometimes we have to look back at the things and times we made it through to realize just how far we’ve come. It’s then we realize that we have what it takes to make it. We can put one foot in front of the other, take one step at a time and keep on making it through. If you’ve never written yourself a letter, try it. It really does work. There is nothing like a little self encouragement. I say it often but it needs to be said often. We’ve got this. If you are working towards your goals or you have some things that you want to achieve or you’re having a tough time right now, know that you can make it. Deep breaths, make a plan, write that letter, chin up and keep pushing forward. Also, I want to remind you that it’s not a race. I had to remind myself. I can take this one step at a time and accomplish my goals. Take your time. One step at a time. This is a journey. Life is a journey.
